Zucchini Parmesan Chips

What you’ll need:

·      16 medium zucchini

·      8 tablespoon olive oil

·      2 cup dry bread crumbs, plain

·      1 pound Parmesan, freshly grated

·      1 tablespoon salt

·      1 tablespoon black pepper, freshly ground

·      Cooking spray

Prep time: 30 min. ~ Cooking time: 30 min. ~ Serves: 32

How you prepare it:

1)       Preheat oven to 450 degrees.

2)       Coat a baking sheet with cooking spray.

3)       Slice zucchini into one-fourth inch rounds.

4)       Place zucchini in medium bowl with oil.

5)       In a small bowl, combine Parmesan, salt, and pepper.

6)       Dip each zucchini round into the Parmesan mixture, pressing the coating onto the round to make it sticks.

7)       Place zucchini rounds on the baking sheet.

8)       Bake zucchini rounds 25 to 30 minutes, until crisp and brown.

9)       Remove zucchini rounds with spatula.

10)  Serve immediately and enjoy!
